Seafood Safety

We hand-select each fish and scrub clean every mollusk. Only those with bright eyes and firm flesh make it to our kitchens.

We exercise caution and only choose to process seafood low in the food chain to ensure safe mercury levels.

Why do we gently cook our shellfish instead of freeze-drying them raw?

This is due to the fact that shellfish often have bacteria that can only be destroyed by cooking. We choose to gently cook the mollusk to prevent food poisoning and make every bite a nutrient dense snack!
